CHICAGO — Blue Diamond Growers' Global Ingredients Division has entered the functional ingredients market with the release of almond protein powder. Launched at IFT18, held July 15-18 in Chicago, the powder may be used in a range of bakery applications, including high-protein nutrition or snack bars, breakfast cereals or brownies.

Blue Diamond’s protein powder serves as an active component in a protein ingredient blend. It has a fine texture, smooth mouthfeel and neutral flavor. The powder can also act as a masking agent for unwanted flavors that come from other protein sources in a product.

“Almond protein powder fills a genuine need for a better tasting and more natural protein source,” said Bill Morecraft, senior vice-president for Blue Diamond Growers' Global Ingredients Division. “We’re excited to continue our record of innovation and be among the first to introduce an almond product for the protein category.”

The ingredient is free from G.M.O.s, gluten, dairy and soy, and is a substantial source of fiber, magnesium, phosphorous, manganese and copper.
